I have placed some "more" explanatory photos below that, hopefully, will help you along in your Italian culinary adventure. Sometimes a picture really helps!... ;-)

So now we have all the chicken cutlets breaded and ready for cooking and hot olive oil in the pan. And awaaay we go!!!
Make sure the oil is nice and hot before you place the cutlets into the oil. Remember, you don't want the chicken to bath in the oil, just briefly cook in it so it gets nice and golden brown on each side. The chicken is going to cook fast because it's thin and you pounded it out.
Ok, your oil is nice and hot, now you place the breaded cutlets into the oil and cook until golden brown. While cooking, you will want to add some fresh ground pepper and some fresh parsley. Fresh parsley, Kapish? FRESH! Very important!.
See how nice and golden brown these are? You want to flip them when they have this color. Then you cook them on the other side for about the same amount of time. You want the other side to look like this as well.
You will want to get a paper grocery bag with paper towels on top of that. Take the cutlets out of the pan with a fork, let the cutlet drip dry over the pan a bit before you place them on the paper towel to dry.
You then want to place some paper towels on top and press, this will help get rid of extra grease and oil.
Then you cook some more and do it all over again. You might have to change out the oil in the middle of the process. Your making a whole bunch of cutlets here, so about midway through your oil is going to get full of over cooked crumbs. When you change out the oil, be sure to wait and let the oil get hot again.
There they are, all finished and ready to eat! YUM!!! Just beautiful! You did it! A job well done. You gonna love these, trust me! My favorite thing to have on the side with this is Fettucini Alfredo. It goes really well with the cutlets. OH! That reminds me! I'm going to have to add a recipe for Fettucini Alfredo to this site. Ok, note to self; work on getting the Fettucini Alfredo recipe written out and on the site, have camera ready! Got it! :-)
