...Oh just look at that yummy sauce! Nico is doing a good job here. Here we see the OH so important bay leaf taking a dip in the sauce. :-)

Hi Anthony,
GOD BLESS YOU! I was looking for a good spaghetti sauce because I was tired of mine (sorry for my English I am from Quebec Canada(FRENCH)) So I was on the google search and thank god I saw your site. I don't know if everyone is like me, but I was so anxious preparing that sauce that my wife says I was like a kid at x mas time. My wife and kids (2 boy and girl) and mother in law just really loves it. So after a full day at work I went to the store to by everything that I need and start the recipe at 5:30pm. I don't like wine but I drink a couples of bud lights during the culinary trip. So I taste the sauce at around 10:00pm when my wife and children was sleeping, I didn't have the choice to wake up my wife and tell her about the wonderful, magical, unbelievable, incredible taste of that sauce. So at 10:30 I call my mother (she lives in Florida) and tell her about that recipe and she decided to do it the next morning. Her best friend lives in Quebec and she is Italian and my mother says that your sauce was just like her best friend was preparing when they were at college so that gives her a bunch of old souvenirs. I will try to send you pictures of my next experience. Thanks again it really relax me after a big day at work. As the blues brothers says you are on a mission from GOD. So don't stop your mission. Thanks again!

~ Thanks for the photos Trev! :-)

Here we see Trev hard at work! Trev is in Da kitchen cooking up some serious Italian stuff! On the top here you see he has a nice sign for all to see. Ok, I zoomed up on this sign and what I think it says is "Trevor's Fine Italian Dining ~ Eeh!" At least that's what I think is says. On the right we see Trev here with the OH so important glass of Red Wine, this really helps the whole cooking process!
Let's Cook! Here it is, here's da stuff! We see here that Trev has been busy preparing all the important items he will need to tackle this project..
Hmmm... the meatballs! This is the really important part of this recipe. This is the part where you brown the meatballs in a nice HOT pan and get the entire house all smoky and everything starts to smell good at this point. These little meatballs add so much flavor to the sauce!

Hey Anthony!
It's Trev again ... Trev who you say?! Well you may or may not remember me from a few years back. I had you on my MSN for awhile and I was living in Vancouver. I also believe one of my questions about sauce consistency appears on your website in the sauce talk section. I wonder if that helps? Anyway, as it's the new year, of course I had to make Spaghetti Sauce and Balls! :) I have to tell you, I've become quite pro at this recipe and these days when I make it I usually turn on the Italian music and grab a glass of vino ... then I pretty much dance around like an idiot makin the stuff for 3 or 4 hours. Generally take my time cause I happen to enjoy the whole process! I was looking at your site and it has sure come a long way - cudos to you! Oh yeah, I also wanted to tell you that my girlfriend thinks I'm a head case because everytime I make "The Sauce" I document every step with pictures! What can I say, I enjoy it! .... Once I get them organized I'll send you a few for interests sake and if you need any pics to cover any steps on your site, trust me I have them. Wanna hear something else that kicks ass?! I gave Spaghetti Sauce and Meatballs as a Christmas gift last year to a lucky few choice friends! Anyway dude, I just finished makin "The Sauce" 20 minutes ago and it's simmering, so I got a little excited and figured I'd send you another email to thank you once again for this most spectacular contribution. Gotta go tend to it now Tony - smells a good!

Here's a few pics from today - all the best to you and your family in 2008!

Hmm.. The meatballs and spaghetti are ready to go! Let's eat! :-)
Dig the Japanese labeling, Cool! The Italian goodies in Japan! Good to know if I were in Japan I could still make the sauce ;-)
Hi Anthony,
I took meatballs and sauce to my English class last night. They were so excited, and they couldn't stop talking about how good it smelled. One of the students didn't make it to class so we got to eat her portion.... ...'snoozers are loozers'...haha. I'm sure she will be disappointed that she missed out.

...and Here is Steve working hard in the kitchen stirring the sauce! Very important. You MUST not forget to stir the sauce! Here we see Steve opting for the beverage of beer over the recommended wine ;-)
Steve was smart and prepared the meatballs and braciole in advance. This does help your kitchen from looking like a missile hit it. ;-)
Hmm... I can smell the braciole now. Just lovely! Brown 'em good now and then plop them right in the sauce.
Here it is! The finished product. Good work Steve, you were brave, you tackled the project and now it's time to eat! Yum!

Anthony
--- today's the day!! I've been looking forward to making this all week, as I've been low-carbing but cheat like hell on the weekends (I call it the Clearwater Beach diet, lol).. wish me luck -- I'm going in..

<----Steve--is--a--brave--fellow-->--Not--afraid--to--tackle--the--sauce! :-)------>

I have a few photos to share with you from my cooking episode yesterday..
(up until the batteries in my camera died, grrrr..) I have to tell you my daughter and I absolutely loved the sauce and braciole!! And meatballs too, can't forget the meatballs.. Thank you sooo much for posting the recipes and detailing the steps.. this is one of those meals that I love putting together -- the more time and effort spent, the better! These were fantastic recipes and part of my repitoire from now on!! Three thumbs up!! You will notice from the pics that I made up the braciole and meatballs ahead of the sauce so that I had a little more control over the kaos in the kitchen.. (not that kaos in the kitchen is necessarily a *bad* thing, lol).. and the only other things I substituted were the music and wine -- I had beer and jazz, lol.. It was a great event and I'm looking forward to trying the other recipes on your site.. thanks again, Anthony!

PS; Do you happen to have a recipe for a nice pizza sauce??
Sorry Steve, I don't have a good pizza sauce recipe.

~ Thanks for the photo Mike :-)

Anthony, Manitoba eh? Metis also? I searched in vain for a real Italian sauce recipe till I found your page. Most Google links are to U.S. mainstream WASPish recipes that are totally whitewashed and bland. Your personal engaging approach is great, and helped me make my first authentic sauce. I deviated a bit -- I used fresh tomatoes, herbs, peppers from my garden, also used garlic/basil sausage instead of pork chops, and added peppers, mushrooms. I hope that's OK. Will be working further on recipes from your site, as you can see from the pic, lots more tomatoes coming in. This is my best year ever!! Again, great to find your site and your personal/Italian take on sharing recipes.
Sorry, I couldn't get your Italian music link to work, so had to substitute Jimmy Cliff reggae. Love your work, keep it up. I'm not sending a picture of myself, I'm just another guy... you're right, women don't seem to be participating in your forum... but they never were the best cooks anyway (just grandmothers)! PS Note in the pic (not my best, but oh well) the fresh parsley and parmesan on the plate.. didn't have chili peppers but will next time! PPS I think the old Italian woman next door is jealous, after smelling those meatballs searing!!

This is a very nice spread! Great job Jason!!!! This photo is making me hungry!
...and here we have the oh so important garlic bread all ready to go, complete with the glass of wine for encouragement ;-)
...and to the left here we see the sauce looking very good! The water is getting ready for the pasta, all looks wonderful! This is the best part, when you are close to actually enjoying the fruits of you labors.

Anthony,
Excellent job on laying out the process! Definately! Here are the better pictures of the final product and a closeup on the sauce. In a couple of the pictures you can see how late I was up making it, said 1:30 in the clock... that's AM last night (didn't bring that one w/me though!). Here are the ones I have though. Now I'm ready to try with the guests... can't let them distract me when It's time for the garlic bread!! Thank you! Hope it looks like it's supposed to! I added a ceaser salad too... I usually just whip the dressing together but if interested I can measure it up and send ya a recipe to try it, it's the least I can do!

Hey Anthony!! I spoke to you years ago when I first found your website. I see you've added new content over the years. I made this over the weekend and again it was fantastic.. So many good leftovers! :) I was showing a few co-workers your site last week and I think they are going to make this now too. It just keeps growing man, soon everybody will make your grandmas spaghetti sauce and meatballs!!
That sauce was sooooooo good, I thawed some out over the weekend and had it last night for dinner!! Made Anthony's Garlic Bread to go with it. A friend came over to have some w/me, it was delicious!! Sopping that sauce up with the bread is a REQUIREMENT!! It was nice to hear from you and I will be in touch again, maybe take some more pics of the browing process this time :) I LOVE this spaghetti sauce and meatballs!!
